And a man who was only prevented by a red-eye flight from eating a roadkill bear he picked up in the morning and left undressed in his car all day is very much the type of person at high risk for brainworms.

Prions. Scary stuff. Could absolutely get it from exposure to brain matter from a bear or dear.
Stay away from brains. It can kill you most horribly.
Eating brains is only a potential problem if you have them in the first place.
